The combination of chicken, garlicky dressing and chunky croutons in this caesar salad is hard to beat. I’ve tried many dressing recipes. I’ll share with you my favorite two dressings: one with anchovies and the other one without anchovies. Dressing Nb 1: 4tbs Mayo (for lighter version I substitute it with Greek yoghurt). 2tbs water. 150g Parmesan. 1tsp anchovies (minced). 1 clove garlic (minced). 1/2 lemon juice . Dressing Nb 2. 2 garlic cloves. 1 cup Mayo (or Greek Yogurt). 2 tsp Dijon Mustard. 2 tsp Worcestershire Sauce. 2 Tbs vinegar. 1/2 cup shredded Parmesan. 2 Tbs olive oil. 1/2 lemon juice.
