I can have such plate as a main dish or even a salad full of nutrients. INGREDIENTS: 1 cup quinoa (rinsed) 250 g boneless chicken breasts 1/2 cup Barbecue sauce 250 g zucchini Sweet corn 1/4 cup Feta cheese (crumbled) 1/4 cup green onions Salt and pepper to taste DIRECTIONS: Cook quinoa following the directions on package. Season the chicken with salt and pepper, grill or pan fry it over medium-high heat unti cooked through and lightly golden, about 4-6 minutes per side. slice and mix in the BBQ sauce. Grill the zucchini slices until cooked, about 2-3 minutes per side. Assemble all ingredients. top it with more BBQ sauce if desired. ENJOY 🙂
