I love all kinds of pasta dishes! Quick & easy to prepare, flavourful & fulfilling!.
I prepared this Creamy Lemon Shrimp Linguine literally in 20 min.

 

INGREDIENTS
  •  500 g Linguine pasta
  •  500 g shrimp, peeled/deveined (tail can be left on or off)
  •  1 Tbs olive oil.
  •  3 tsp minced garlic, divided.
  •  1 Tbs butter.
  •  1 Tbs lemon zest.
  •  1/2 cup lemon juice.
  •  1 cup chicken or vegetable stock.
  •  1 cup cooking cream.
OPTIONAL:
  • Parmesan cheese, for sprinkling
  • Chopped basil or parsley, for garnish
  •  Red pepper flakes.
DIRECTIONS
1. Cook pasta according to package directions. Reserve 1 cup pasta water, and drain it.
2. In a large pan heat 1 Tbs of olive oil . Add 1 tsp of the garlic along with the red pepper flakes (if you want to add it) and the shrimp and cook about  3 minutes (cooking shrimp halfway)
3. Add stock, remaining 2 tsp of garlic, and the lemon juice into the pan. Let the sauce simmer for 5 minutes on medium heat. Add in the butter. Then, the lemon zest and the half and half. Let the sauce come to a gentle simmer, then add the pasta into the pan. Toss to combine and coat.
4. Adjust salt and pepper as desired.
5. Add pasta water if needed.
6. Sprinkle with parmesan cheese and chopped parsley/basil.
