This is a classic easy Pumpkin Soup made with fresh or frozen pumpkin cubes.
Thick, creamy and full of flavors.
INGREDIENTS:

1 onion.

1 garlic clove.

500 grams pumpkin cubes.

2 medium sized carrots.

a stem of fresh Thyme.

1/2 cup coconut milk or fresh cream.

4 cups chicken stock or water.
DIRECTIONS:

Chop onions and garlic into small cubes. Saute them.

Add carrot cubes and thyme, saute for another 5 min.

Add pumpkin,chicken stock.

Boil for 20 min., remove thyme, blend, add coconut milk or fresh cream.
