I can have such plate as a main dish or even a salad full of nutrients.
INGREDIENTS:
  • 1 cup quinoa (rinsed)
  • 250 g boneless chicken breasts
  • 1/2 cup Barbecue sauce
  • 250 g zucchini
  • Sweet corn
  • 1/4 cup Feta cheese (crumbled)
  • 1/4 cup green onions
  • Salt and pepper to taste
DIRECTIONS:
  1. Cook quinoa following the directions on package.
  2. Season the chicken with salt and pepper, grill or pan fry it over medium-high heat unti cooked through and lightly golden, about 4-6 minutes per side. slice and mix in the BBQ sauce.
  3. Grill the zucchini slices until cooked, about 2-3 minutes per side.
  4. Assemble all ingredients. top it with more BBQ sauce if desired.
