It’s a complete meal not just a salad! .
I love to prepare it and keep it in the fridge for few hours before devouring it πŸ˜‹.
Perfect for summer lazy days πŸ‘ŒπŸΌ.
INGREDIENTS
For 1 portion:
  • 2 cups cooked quinoa
  • 1/2 cup roasted zucchini
  • 1/2 cup roasted bell pepper
  • 1/2 cup roasted mushroom
  • 1/2 cup cherry tomatoes
  • 3 Tbs olive oil
  • 2 Tbs lemon juice
  • Salt & Pepper to taste
DIRECTIONS
1. Cut zucchini, bell pepper, mushrooms into big pieces.
2. Drizzle with olive oil, salt and black pepper.
3. Roast in preheated oven for 15 minutes.
4. When done, cut them into smaller pieces.
5. Mix with cherry tomatoes, cooked quinoa, olive oil, lemon juice, salt & pepper.
6. Chill well before serving.
