The combination of chicken, garlicky dressing and chunky croutons in this caesar salad is hard to beat.
I’ve tried many dressing recipes.
I’ll share with you my favorite two dressings: one with anchovies and the other one without anchovies.

Dressing Nb 1:

      • 4tbs Mayo (for lighter version I substitute it with Greek yoghurt).
      • 2tbs water.
      • 150g Parmesan.
      • 1tsp anchovies (minced).
      • 1 clove garlic (minced).
    • 1/2 lemon juice .

Dressing Nb 2.

  • 2 garlic cloves.
  • 1 cup Mayo (or Greek Yogurt).
  • 2 tsp Dijon Mustard.
  • 2 tsp Worcestershire Sauce.
  • 2 Tbs vinegar.
  • 1/2 cup shredded Parmesan.
  • 2 Tbs olive oil.
  • 1/2 lemon juice.
  • Salt & Black pepper.

 

DIRECTIONS
  1. Mix all ingredients using a hand mixer.
  2. I marinate chicken breast with sweet paprika, garlic powder, salt and pepper.
  3. Grill it or sauté it with a Tbs of oil over medium to high heat, for around 20 min (move it from side to side every 5 min.).
  4. Serve with iceberg lettuce, croutons and shredded Parmesan.
