During summer , I like  cold, vegetarian meals. And as you all know, our Lebanese cuisine has a great  variety of vegetarian recipes.  
Today’s recipe is “Potato Kebbe”.  I love how simple it is and I enjoy its silky texture.

 

 

Ingredients:
        • 3 medium sized potatoes.
        • 3/4 cup fine bulgur.
        • Salt (as desired).

 

Directions:
        1. Boil potatoes until they are so tender.
        2. Peel, mash and mix them with bulgur while they are hot.
        3. Leave them together till the bulgur get softened (for around 30 min).
        4. Rub the mix with olive oil, put in plates.
        5. Serve with Thyme salad, olive oil and kammoune mix.
