“Oriental Rice” aka Mansaf,
It’s a well know dish in many Arabic countries.
Today, I am sharing with you the lebanese style oriental rice.

 

INGREDIENTS
  • 1 kg Lamb cutlets ( you can substitute it with a whole chicken, or chicken legs).
  •  A whole onion, carrot, cinnamon stick,Laurel leaves for boiling meat.
  •  300 g minced meat.
  •  1.5 cup Basmati rice.
  •  1 medium sized onion (chopped).
  •  2 Tbs veg. Oil.
  •  3 cups broth (from lamb cutlets or chicken).
  •  1 tsp cinnamon.
  •  1/2 tsp black pepper.
  •  1 tsp salt.
  •  Nuts for garnishing (dried raisins, almonds, cashews, pistachios).
DIRECTIONS
1. In a pressure cooker, sauté lamb cutlets (chicken) with a Tbs of veg. Oil. Then cover it with hot water, remove froth , add a whole onion, carrot, cinnamon stick, Laurel leave. Cook it on low heat for 35-40 min.
2. Meanwhile, in a casserole, heat a Tbs of oil, add minced meat, try to cut it into smaller pieces with a wooden spoon while cooking.
3. When it’s done, add basmati rice, cinnamon, black pepper, salt, mix them carefully so the rice do not break.
4. Add meat/chicken broth, bring it to boil, then lower heat to the max, cover it and let it cook.
5. I usually re-sauté lamb cutlets(chicken) so they have a beautiful brown colour before serving.
6. Serve the rice with lamb cutlets, topped with fried nuts and with a salad or yogurt on the side.
