This is a classic easy  Pumpkin Soup made with fresh or frozen pumpkin cubes.
Thick, creamy and full of flavors.
INGREDIENTS:
  • 1 onion.
  • 1 garlic clove.
  • 500 grams pumpkin cubes.
  • 2 medium sized carrots.
  • a stem of fresh Thyme.
  • 1/2 cup coconut milk or fresh cream.
  • 4 cups chicken stock or water.
DIRECTIONS:
  1. Chop onions and garlic into small cubes. Saute them.
  2. Add carrot cubes and thyme, saute for another 5 min.
  3. Add pumpkin,chicken stock.
  4. Boil for 20 min., remove thyme, blend, add coconut milk or fresh cream.
