Delicious and delicate Middle Eastern cookies that melt in your mouth…
Few ingredients, so easy to make, enjoy them in the afternoon with a cup of tea.
INGREDIENTS
(Make around 120 pieces).
  • 4 cups (500g) all purpose flour.
  • 1 1/3 cup (150g) powdered sugar.
  • 1 1/3 cup (300g) ghee.
  • Pistachios for garnish.
DIRECTIONS
1. Adjust oven rack to middle position, and preheat oven to 120 degrees.
2. Line baking tray with parchment paper or silicon mat.
3. In the bowl, add flour, powdered sugar and whisk to combine.
4. Add in the ghee and mix with electric hand mixer.
5. When it becomes crumbled dough, combine it with your hands.
6. It will form a ball, cover it with cling film, chill it for around 1 hour.
7. After 1 hour, get it out of the fridge, and form small balls (weight around 8g).
8. Place them on baking sheet, and press a bit the top with your finger.
9. Add pistachios.
10. Bake for 15-17 minutes.
11. When out of the oven, They will not feel hard and will leave dough residue on your finger if you touch them. That’s exactly what we want.
12. Allow cookies to cool, then store them in cookies box for 2 weeks.
